Paratha is very common Indian food item. You have variety of
paratha mentioned in hotel menu cards as well as prepared at home ranging from
the most common aloo paratha to gobi paratha to mutter paratha and many more
which I might not have heard also...
Well we at our home don’t make paratha’s too often but tonight paratha
was on our dinner’s menu. I obviously with
the help of mom prepared mixed vegatble paratha
as at my home we are not very keen on eating only aloo paratha so
thought of adding different veggie flavours to it...
Preparation time: 5 minutes to make the dough add 5 more
minutes to shred cabbage and carrot. While you make dough and shred veggies,
you can boil potatoes and cauliflower. Add another 10 minutes to prepare the
stuffing.
Cooking time: 20 minutes
Makes: 5 parathas
What goes in to the stuffing:
Carrot, shredded- ½ cup
Cabbage, shredded- ½ cup
Potato, boiled- 1 big sized
Cauliflower florets,
boiled- ½ cup
Onion, minced- 1 big sized
Lemon juice- 2 tbl spn
Salt to taste
Coriander leaves, chopped- ½ cup
Chilly, Ginger and Garlic paste- ¾ tbl spn
What goes in the dough:
Wheat flour- 2 cup
Ghee- 1 tbl spn
Water – about 1 glass
For cooking the paratha’s I used ghee.
How did I make it:
First of all make the dough in a wide bowl. In the wheat
flour, put a little ghee and then keep on adding water little by little till
the dough becomes soft (Foodies’ note don’t make the dough too soft) and
pliable. Divide it into 10 portions and make rounds. Keep them aside.
Boil potato and cauliflower florets in a pressure cooker for
3-4 whistles. You can also add peas and French beans to it.
After done, drain off the water. Peel off the potato after
it cools.
I used blender to mince the onions and remove the excess
water from the minced onions by pressing it between two hands. This will keep
the stuffing firm.
In a deep plate, mash potato & cauliflower. Add onion, cabbage, carrot, coriander leaves,
salt, chilli-garlic-ginger paste and lemon juice. Mix them all well. Divide the
stuff into 5 equal parts.

Roll the dough like you do for chapatti. Make two chapattis.
Apply little water with finger on the sides of the chapatti on which you going
to spread the stuffing. This will stick the two chapattis properly. Spread the
prepared stuffing. And super impose the other chapatti.

Cook them on a tawa until both the sides turn golden brown.

Ready to eat hot paratha eat with pickle and vegetable
raita....
And woh kehte haina garam garam parathe ko dhande dhande
dahi ke saath khane ka maza hi kuch aur hai... I tried it and it really is...
